Banana Choc Chip Pancakes with Coco-Peanut Sauce

  • 2 medium/small bananas
  • 2 tsp coconut oil - plus extra for frying? other oils will also work
  • 175 ml plant-based milk
  • 2 tsp sugar or more if you like them sweeter
  • 120 g plain flour or you can use oat flour for GF
  • 1 tsp baking powder
  • Pinch of salt
  • 1-2 tbsp chocolate chips
  • Optional: 1 tbsp chia seeds for health benefits


  • 1 tbsp peanut butter
  • 100 ml coconut cream
  • Handful of roasted peanuts


  • Begin by melting the peanut butter and the coconut cream together in a small saucepan on a low heat
  • Once the two have incorporated and the mix turns a deeper brown colour take off the heat and add sugar to taste, set aside until serving
  • Mash the bananas in a mixing bowl, then mix in the oil, the sugar and the plant-based milk
  • Combine the flour, baking powder, salt and then mix into the wet ingredients
  • Stir in the chocolate chips and chia seeds if using
  • Stick a frying pan with a splash of oil on a high heat
  • Once the pan is hot spoon a 6th of the mix in to the pan and push the mix down on the pan to form a circle
  • Let it fry for a few minutes until you start to see bubbles forming on the top
  • Flip the pancake and cook on the other side, the outside should be a nice golden brown with fluffy insides
  • Stick the cooked pancakes in the oven on a low heat to keep them warm and repeat the process until all the mix is finished
  • Stack the pancakes, spoon on the sauce and sprinkle with peanuts
