Jackfruit is a fascinating ingredient. It grows on the side of trees in tropical climates. The whole fruit is humongous, bigger than your head! When you open it up you will find loads of segments of edible flesh. Cutting the fruit from the tree whilst it is still young provides you with soft savoury flesh with a stringy texture that can be cooked into all sorts of vegan dishes.
This vegan jackfruit burger recipe is simple to make and contains some hidden protein from the white beans. If you have any leftover patty mix, you can also store it in the fridge or freezer to turn it into vegan meatballs or burgers at a future date.
Air fryer friendly: These jackfruit burger patties can be fried in an air fryer using zero oil!
Equipment:
- Air fryer Or frying pan
Ingredients:
- 2 tins Jackfruit I like to use Biona Organic Jackfruit
- 1 litre Vegetable stock
- 4 cloves Garlic crushed and peeled
- 100 g White beans I love the Bold Bean Co
- 1 tsp Ground coriander
- 1 tsp Ground cumin
- 1 tsp Onion powder
- ½ tsp Smoked paprika
- 2 tsp Chipotle paste
- 1 tbsp Tamari soy sauce
- Salt to taste
- Black pepper to taste
- Breadcrumbs
Instructions:
Make the jackfruit burger patties
- Drain the jackfruit and put into a saucepan with 1 litre of stock. Put on a high heat on the stove and bring to the boil.
- Let it simmer for about 15 minutes and then add in the peeled garlic cloves. Continue to simmer for another 5 minutes until the jackfruit is nice and tender.
- Drain the jackfruit and let it cool slightly.
- Add the cooled jackfruit into a food processor with the remaining ingredients, excluding the breadcrumbs. Slightly pulse the ingredients together so that everything mixes, ensuring there are still strips of jackfruit. If you prefer your patties softer, blitz for longer.
- Move the mix into a bowl and put in the fridge to cool down for 30 minutes. You can use this time to do some washing up… or you can skip this step altogether, just note that your patties may be harder to form when warm.
- Once cooled (and washed up) take the mix out of the fridge and form it into 4 large patties, or 8 small patties.
- Coat the patties evenly in breadcrumbs
If using a frying pan
- Heat a tablespoon of oil in a large frying pan. Fry off the patties at medium to high heat for at least 4 – 5 minutes on each side.
If using an air fryer
- Cook your patties on a rack in your air fryer with no oil at 180° for 12 minutes
Serve
- Serve the patties in a burger bun with all your favourite burger toppings
