Easy vegan fried egg recipe

I love making myself a vegan fry-up on a Sunday morning. It feels like tradition almost, a very British habit. And all it was missing was a fried egg with a runny creamy yolk.

This vegan fried egg is easy to create and requires zero science! As long as you are happy with the ‘egg’ yolk being runny before serving.

Ingredients:

Vegan Egg Yolk

Vegan Egg White

Instructions:

Make the vegan egg yolk

  • Put all the vegan egg yolk ingredients into a blender and blend until smooth. Put into a bowl for serving

Make the vegan egg whites

  • Clean the blender and add all the egg white ingredients until it, blend until smooth, and set aside
  • Get a frying pan on the hob on a medium to high heat
  • If you have them, place the metal rings into the hot pan and pour spoonfuls of the blended 'egg' white mix into the rings
  • If you don't have any rings, pour the mix straight into the pan and let it form its own shape (like a fried egg would). You may need to cook them one-by-one
  • Cook the vegan egg whites in the rings for about 4 minutes, until crispy on the bottom. Then you can remove the rings and either flip the whites over to cook the over side (much quicker), or you can put a lid on the top of the pan and let it cook for another 3-4 minutes.

To Serve

  • Remove the egg whites from the pan and place onto a slice of bread, or even better, an English breakfast muffin.
  • Pour the egg yolk mix over the top
  • Enjoy your lazy Sunday morning in vegan egg paradise!
