Rhubarb is technically a vegetable, but is sweet in taste making it a really great ingredient for vegan baking. It has a very tart flavour that works well when balanced with anything quite sweet. Rhubarb is very seasonal so you may struggle to find it fresh during certain times of the year. In which case, you can give frozen rhubarb a go.
