Aquafaba is the liquid from a tin of beans, with the most commonly used coming from chickpeas. This liquid is high in protein, carbohydrates and other plant solids which have been transferred over from the beans. Because of this, the liquid emulsifies, foams and binds just like eggs. It is used in many vegan baking recipes and vegan products that you’ll find on supermarket shelves.
